In El Arenal center you can visit Don Valente, Cascahuin and Marengo tequila factories, which take guided tours to learn how tequila is made—in addition offer tasting of their labels.

 

Each includes visiting the harvesting field where they spend time with jimadores, who extract blue agave (piñas)’s heart once they are eight or nine years old. Afterwards, the hearts are transferred to the steam ovens for a 72 hour slow cook that will extract the essential juices and sugars, giving rise to the tequila.

 

The factories also show the fermentation and the double distillation in copper stills processes. Some include the settle storehouses, filled with white oak barrels that will give body and flavor to the aged and reposado tequila.
